Cheesy Burrata Crostini with Prosciutto and Peaches

Ingredients:

  • 1 loaf of sourdough or French baguette, sliced
  • ⅓ cup grated Parmesan cheese
  • ⅓ cup grated Pecorino cheese
  • 1 clove garlic, grated
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons melted butter
  • 4 ounces prosciutto
  • 8 ounces burrata cheese, at room temperature
  • 2 ripe peaches, thinly sliced
  • Hot honey, for drizzling
  • Fresh basil leaves, for garnish

Instructions:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Prepare the cheesy topping:
    In a small bowl, mix together the grated Parmesan, Pecorino, garlic, thyme, and melted butter.
  3. Toast the bread:
    Arrange the baguette slices on the baking sheet. Spoon the cheese mixture evenly on top of each slice.
  4. Bake:
    Toast in the oven for about 10–12 minutes, or until the cheese is melted and golden and the edges of the bread are crispy.
  5. Assemble the crostini:
    Once out of the oven, let the crostini cool slightly. Tear the burrata and place a generous spoonful on each toast. Top with a slice of prosciutto and a few peach slices.
  6. Finish with flair:
    Drizzle with hot honey and garnish with fresh basil leaves.
  7. Serve immediately and enjoy the perfect balance of creamy, salty, sweet, and crispy!
