Spinach Cream Cheese Stuffed Chicken Breast
Ingredients:
2 large chicken breasts
1 cup (30 g) fresh spinach, chopped
4 oz (115 g) cream cheese, softened
¼ cup (30 g) shredded mozzarella
1 garlic clove, minced
1 tbsp (15 ml) olive oil
½ tsp paprika
Salt & pepper, to taste
Directions:
Preheat oven to 375°F (190°C). Butterfly chicken breasts and season with salt, pepper, and paprika. In a bowl, mix cream cheese, spinach, mozzarella, and garlic until creamy.
Stuff each chicken breast with the mixture and secure with toothpicks. Heat olive oil in a skillet, sear chicken for 2 minutes per side, then transfer to the oven and bake for 20–25 minutes until cooked through. Serve warm with your favorite sides.
