For Topping

  • 2 tbsp melted butter
  • ½ tsp garlic powder
  • ½ tsp dried parsley
  • Optional: Everything bagel seasoning or a sprinkle of coarse salt

🔥 Instructions

1. Preheat & Prep

  • Preheat oven to 375°F (190°C).
  • Lightly grease or line a baking sheet or 9×13-inch dish with parchment paper.

2. Cook Onions

  1. In a small skillet, melt 1 tbsp butter over medium heat.
  2. Add diced onion, sauté until soft and golden (about 5 minutes).
  3. Stir in Worcestershire sauce, garlic powder, and onion powder.
  4. Remove from heat and let cool slightly.

3. Assemble the Biscuits

  1. Separate each biscuit and flatten slightly into a 4-inch circle.
  2. Place a slice of provolone on each biscuit (fold to fit if needed).
  3. Add a small handful of roast beef (2–3 tbsp) and a spoonful of sautéed onions.
  4. Fold the edges of the biscuit dough up and over the filling, pinching to seal.
  5. Place seam side down in the prepared baking dish.

4. Brush & Bake

  1. Mix melted butter, garlic powder, and parsley in a small bowl.
  2. Brush over each biscuit.
  3. Bake for 18–22 minutes, or until golden brown and cooked through.

(Tip: If using large “Grands” biscuits, it might take closer to 25 minutes.)

5. Make the Au Jus Dip

  1. In a small saucepan, combine beef consommé, Worcestershire sauce, onion powder, and garlic powder.
  2. Simmer over medium heat for 5–10 minutes.
  3. Taste and adjust seasoning; keep warm for serving.

6. Serve

  • Serve the warm biscuits with small ramekins of au jus for dipping.
  • Garnish with a little extra parsley or melted butter if desired.

💡 Tips & Variations

  • Add caramelized onions for richer flavor (takes a bit longer but worth it).
  • Spicy version: Add a dab of horseradish or spicy mustard inside each biscuit.
  • Cheese swap: Try Swiss or Gruyère for a classic French dip flavor.
  • Make ahead: Assemble up to 1 day ahead and refrigerate; bake just before serving.
  • Air fryer version: Cook at 350°F for about 10–12 minutes (check halfway).
