π§Ύ Ingredients
For the dough:
- 2 cups (250 g) all-purpose flour (or bread flour)
- 1 tsp salt
- 1 tsp baking powder (optional β for extra fluffiness)
- 2 tbsp olive oil (or melted butter)
- ΒΎ cup (180 ml) warm water or milk (add a bit more if dough feels dry)
For the topping / flavoring:
- 2 tbsp olive oil (for brushing)
- 1 clove garlic, finely minced (optional for more aroma)
- 1β2 tbsp chopped fresh parsley
- Β½ tsp chili flakes (adjust to taste)
- Pinch of sea salt or flaky salt for finishing

- Mix the dough
- In a large bowl, combine flour, salt, and baking powder.
- Add olive oil and warm water gradually.
- Mix until a rough dough forms, then knead for about 3β4 minutes until smooth and soft.
- Cover and let rest for 15β20 minutes (optional, but helps gluten relax and makes rolling easier).
- Divide and shape
- Divide the dough into 6β8 equal balls.
- On a lightly floured surface, roll each piece into a thin round (about 6β7 in / 15 cm diameter).
- Prepare the herb oil
- In a small bowl, mix olive oil, minced garlic (if using), parsley, and chili flakes.
- Set aside for brushing.
- Cook the flatbreads
- Heat a dry skillet or cast-iron pan over medium-high heat.
- Place a rolled dough round on the hot pan and cook for 30β45 seconds until bubbles appear.
- Flip and cook another 30β45 seconds on the other side.
- Repeat until lightly golden and cooked through.
- Stack cooked flatbreads on a plate covered with a towel to keep them soft.
- Brush with flavor
- While still warm, brush each flatbread with the parsleyβchiliβoil mixture.
- Sprinkle a pinch of sea salt on top for extra flavor.
