  • 3 large sweet potatoes, peeled and cut into ½-inch thick rounds (or cubes)

  • 2–3 tbsp honey (adjust for sweetness)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp ground cinnamon (optional, for warmth)
  • 1 cup shredded mozzarella cheese
  • 1–2 tsp fresh thyme or rosemary (optional, for garnish)

Instructions

1. Preheat the oven

  • Set oven to 400°F (200°C).
  • Lightly grease a 9×13-inch baking dish or sheet pan.

2. Prepare the sweet potatoes

  • In a large bowl, toss the sweet potato slices with melted butter, honey, salt, pepper, and cinnamon (if using) until well coated.

3. Bake the sweet potatoes

  • Arrange the coated sweet potatoes in a single layer in the baking dish.
  • Bake 25–30 minutes, flipping halfway through, until they’re tender and lightly caramelized.

4. Add mozzarella
