🍠 Honey Sweet Potatoes with Mozzarella and Butter
Ingredients (Serves 4–6)
3 large sweet potatoes , peeled and cut into ½-inch thick rounds (or cubes)
3 tbsp unsalted butter , melted
2–3 tbsp honey (adjust for sweetness)
½ tsp salt
¼ tsp black pepper
½ tsp ground cinnamon (optional, for warmth)
1 cup shredded mozzarella cheese
1–2 tsp fresh thyme or rosemary (optional, for garnish)
Instructions
1. Preheat the oven
Set oven to 400°F (200°C) .
Lightly grease a 9×13-inch baking dish or sheet pan.
2. Prepare the sweet potatoes
In a large bowl, toss the sweet potato slices with melted butter, honey, salt, pepper, and cinnamon (if using) until well coated.
3. Bake the sweet potatoes
Arrange the coated sweet potatoes in a single layer in the baking dish.
Bake 25–30 minutes , flipping halfway through, until they’re tender and lightly caramelized.
4. Add mozzarella
Remove from oven and sprinkle shredded mozzarella evenly over the hot sweet potatoes.
Return to oven and bake 5–8 minutes , or until the cheese is melted and bubbly.
5. Finish & serve
Drizzle with a little extra honey and sprinkle with fresh thyme or rosemary for garnish.
Serve warm — they’re sweet, salty, and irresistibly cheesy!
Optional Add-Ins & Variations
🥓 Add bacon bits before baking for a smoky twist.
🌶️ Add a pinch of cayenne or red pepper flakes for a spicy-sweet combo.
🧀 Try other cheeses — mozzarella melts beautifully, but you can mix in parmesan, gouda, or feta for more flavor.
🍋 Add brightness with a drizzle of lemon juice or balsamic glaze before serving.
Tips
Don’t overcrowd the pan — spread the sweet potatoes in one layer for even browning.
If you like them crispier, broil for 1–2 minutes after the cheese melts.
You can also make this dish in a cast iron skillet for beautiful caramelization.
