🌱 No-Flour, No-Sugar Oatmeal Breakfast Bake
(Serves 1–2)
Ingredients
- 1 cup oatmeal (rolled or quick oats)
- 1 glass milk (about 200–250 ml; use dairy or plant milk)
- 1 apple, chopped
- 1 banana, sliced
- 3 eggs
- 60 g walnuts, chopped
- Optional:
- 1 tsp cinnamon
- 1 tsp vanilla
- A pinch of salt
- A few berries or raisins
🥣 Instructions
1. Prepare the base
In a mixing bowl, combine:
- oatmeal
- milk
Let it sit for 5–10 minutes so the oats soften.
2. Add fruits & nuts
Stir in:
- chopped apple
- banana slices
- chopped walnuts
- cinnamon or vanilla if using
3. Add the eggs
Crack in the 3 eggs and mix well until everything is evenly combined.
4. Bake
- Preheat oven to 180°C (350°F).
- Pour the mixture into a small baking dish or oven-safe pan.
- Bake for 25–35 minutes, until the top is golden and the center is set.
(If you’re in a hurry: you can also cook it on the stovetop like a thick omelette over low heat, about 10–15 minutes.)
5. Serve
Enjoy warm!
You can top it with:
- fresh fruit
- yogurt
- a sprinkle of cinnamon
- extra nuts
💡 Tips
- For extra sweetness without sugar, add more banana or a handful of raisins.
- For more protein, add a scoop of protein powder.
- Stores well — make a bigger batch and meal-prep for 2–3 days.
