Ingredients

  • 2 lbs carrots, peeled and cut into chunks or thick slices
  • ¼ cup butter (half a stick)
  • ¼ cup brown sugar (light or dark)
  • 2 tbsp honey or maple syrup
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp cinnamon (optional but traditional in many Amish versions)
  • 1–2 tbsp water (helps with early steam)
  • Fresh parsley for garnish (optional)

Instructions

1. Prepare the carrots

Peel carrots and cut them into thick rounds or diagonal slices.
Place them in the slow cooker.


2. Add the glaze ingredients

Add to the slow cooker:

  • Butter (cut into pieces)
  • Brown sugar
  • Honey (or maple syrup)
  • Salt
  • Pepper
  • Cinnamon (optional)
  • 1–2 tbsp water

No need to stir yet — it will melt together as it cooks.


3. Cook

Cook on:

  • LOW for 5–6 hours, or
  • HIGH for 2½–3 hours,
    until the carrots are tender.

4. Thicken the glaze (optional but recommended)

When done:

  1. Stir everything well.
  2. If you want the glaze thicker, remove the lid and cook on HIGH for 15–20 minutes to reduce.

5. Serve

Spoon carrots into a serving dish and pour glaze over them.
Garnish with fresh parsley if desired.

  • Baby carrots can be used — same cooking time.
