Ingredients

  • 2–3 cloves garlic, minced
  • 1 Tbsp Worcestershire sauce
  • ½ cup white wine (optional but traditional; can replace with more broth)
  • 2 cups beef broth

For Assembly

  • 1 baguette or 6 cups crusty bread cubes (day-old is best)
  • 2–3 cups shredded Gruyère cheese
    • Swiss cheese or mozzarella can be mixed in
  • ½ cup grated Parmesan
  • Fresh thyme (optional but recommended)

1. Caramelize the onions (most important step!)

  1. Heat butter + olive oil in a large skillet over medium heat.
  2. Add sliced onions, salt, sugar, and pepper.
  3. Cook 20–25 minutes, stirring often, until deep golden brown and soft.
  4. Add garlic and cook 1 minute.
  5. Stir in Worcestershire.
  6. Add white wine; cook 2–3 minutes to reduce.
  7. Add beef broth and simmer 5 minutes.

This creates the rich French onion soup base.


2. Prep the bread

  • Cut baguette into 1-inch slices or cubes.
  • Lightly toast under broiler or in a 350°F (175°C) oven for 8–10 minutes until dry.
    • This keeps the casserole from turning mushy.

  2. In a greased 9×13 casserole dish, add half the toasted bread.
