⭐ Ingredients
Main
- 8 oz block feta (preferably full-fat, firm Greek feta)
- ½–1 cup good-quality extra-virgin olive oil (enough to fully cover)
Herbs & Aromatics
- 2–3 garlic cloves, thinly sliced
- 1–2 sprigs fresh rosemary
- 1–2 sprigs fresh thyme
- 1 tsp dried oregano or 1 sprig fresh oregano
- 1 small strip of lemon peel or ½ tsp lemon zest
- 1–2 bay leaves
- ½ tsp crushed red pepper flakes (optional but amazing)
Optional Add-ins
- A few whole black peppercorns
- A few olives
- Sun-dried tomatoes
- Orange peel instead of lemon
- Chili slices for spicy feta
🧑🍳 Instructions
1. Prep the Feta
- Pat the block of feta dry with paper towels.
- Cut into ¾-inch cubes (not too tiny—feta crumbles easily).
2. Layer the Jar
Use a clean glass jar with a tight lid.
Add to the bottom:
- a few garlic slices
- some herbs
- a pinch of chili flakes
Add a layer of feta cubes.
Repeat layering herbs → feta until jar is full.
3. Add the Olive Oil
Pour olive oil slowly over everything until all feta is completely submerged.
Tap jar gently to release air bubbles.
4. Seal & Marinate
Close the jar tightly.
Refrigerate and allow flavors to infuse at least 12 hours, but 24–72 hours is even better.
5. Serve
Marinated feta is fantastic with:
- warm crusty bread
- salads
- roasted vegetables
- pasta
- charcuterie boards
- grilled chicken or fish
- as a snack straight from the jar
Drizzle the herb-infused oil on salads, roasted potatoes, or bread — it’s delicious.
