Ingredients

Pork Chops

  • 4 bone-in pork chops (¾–1 inch thick)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ cup all-purpose flour (for dredging)
  • 2–3 tbsp oil (for searing)

Gravy

  • 2 tbsp butter
  • 1 large onion, sliced
  • 2 garlic cloves, minced
  • 1 ½ cups chicken broth
  • 1 cup heavy cream or whole milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard (optional but adds depth)
  • ½ tsp thyme (or 1 tsp fresh)
  • Salt & pepper to taste

Optional additions:

  • ½ cup sliced mushrooms
  • Pinch of cayenne for heat

🧑‍🍳 Instructions

1. Season the Pork Chops

Mix:

  • salt
  • pepper
  • paprika
  • garlic powder
  • onion powder

Season both sides of chops.
Dredge lightly in flour (shake off excess).


2. Sear the Chops

  1. Heat oil in a large skillet over medium-high.
  2. Sear pork chops 3–4 minutes per side until golden.
  3. Remove to a plate (they will finish cooking in gravy).

3. Make the Gravy

  1. Reduce heat to medium.
  2. Add butter to the pan.
  3. Add onions (and mushrooms if using), cook 5–7 minutes until soft and golden.
  4. Stir in garlic, cook 1 minute.
  5. Sprinkle 1 tablespoon flour left from dredging into the pan (optional for thicker gravy).
    Cook 1 minute.
  6. Slowly add the chicken broth, stirring constantly.
  7. Add cream, Worcestershire, thyme, and mustard.
  8. Simmer 3–4 minutes until thickened.

4. Smother the Chops

Place pork chops back into the skillet.
Spoon gravy over the top.
Cover and simmer on low for 20–25 minutes until chops are tender.

(Turn halfway and add a splash more broth if needed.)


5. Final Taste & Serve

Taste gravy – add salt, pepper, or paprika if desired.

  • Rice
  • Egg noodles
  • Cornbread dressing (amazing combo!)
