🧾 Ingredients

Filling

  • 1 lb thinly sliced steak (ribeye is best, but sirloin or shaved beef works)
  • 1 tbsp butter or oil
  • 1 medium onion, finely diced
  • 1 small green bell pepper, finely diced (optional but classic)
  • 1 cup mushrooms, finely chopped (optional)
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup shredded provolone or mozzarella
  • Optional: ½ cup Cheez Whiz (extra-authentic Philly style)

Egg Roll Wrappers

  • 12 egg roll wrappers
  • Small bowl of water (for sealing edges)

For Frying

  • Oil for deep frying (vegetable or canola)

🔥 Instructions

1. Cook the steak mixture

Heat butter or oil in a skillet over medium heat.

Add:

  • Onion
  • Bell pepper
  • Mushrooms (if using)

Sauté 3–4 minutes until softened.

Add the thinly sliced steak.
Season with:

  • Garlic powder
  • Salt
  • Pepper

Cook 3–5 minutes until steak is browned and cooked through.

Remove from heat and let cool 5 minutes so the cheese won’t melt too quickly.


2. Add the cheese

Stir in the shredded provolone or mozzarella.
(If using Cheez Whiz, drizzle it into the meat mixture and fold to coat.)

Mixture should be cheesy, hearty, and scoopable.


3. Fill the egg rolls

Lay an egg roll wrapper on a clean surface in a diamond shape.

Add 2–3 tablespoons of filling near the bottom corner.

Fold in this order:

  1. Bottom corner up over the filling
  2. Right corner in
  3. Left corner in
  4. Roll tightly upward

Wet the top corner with water to seal completely.

Repeat until all egg rolls are filled.


4. Fry the egg rolls

Heat oil to 350°F (175°C).

Fry egg rolls 3–4 minutes, turning once, until:

  • Deep golden
  • Crispy
  • Bubbly on the outside

Drain on paper towels.


5. Serve

Serve hot with:

  • Cheez Whiz
  • Spicy mayo
  • Ranch
  • Chipotle sauce
  • Garlic aioli

Absolutely incredible.


⭐ Tips & Variations

Air Fryer Version

Spray egg rolls with oil and air fry at 390°F for 8–10 minutes, turning halfway.

Oven-Baked Version

Brush with oil and bake at 425°F for 15–18 minutes until golden.

Add heat

Add:

  • Jalapeños
  • Pepper jack cheese
  • Red pepper flakes

Extra cheesy

Add an extra layer of cheese inside each wrapper before rolling.
