Slow Cooker Amish Honey-Glazed Carrots

Cook Time: 4–6 hours (low) or 2–3 hours (high)
Ingredients
- 2 lbs baby carrots (or sliced regular carrots)
- 4 tbsp butter, melted
- ⅓ cup honey
- ¼ cup brown sugar (light or dark)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp ground cinnamon (optional but very traditional in Amish versions)
- 1 tsp vanilla extract (optional; adds a warm, old-fashioned flavor)
- Fresh parsley for garnish (optional)
Instructions
1. Prepare the carrots
- Rinse the carrots and place them into your slow cooker.
- No need to pre-cook or steam them.
2. Make the glaze
In a small bowl, whisk together:
- Melted butter
- Honey
- Brown sugar
- Salt
- Pepper
- Cinnamon (if using)
- Vanilla (if using)
3. Combine
- Pour the honey-butter mixture evenly over the carrots.
- Stir to coat everything well.
4. Slow cook
Choose one of the following:
- Low: 5–6 hours
- High: 2½–3 hours
Stir once or twice during cooking if you can, but not required.
5. Thicken (optional)
If you’d like a thicker glaze:
- Remove the lid for the last 20–30 minutes on high to allow the glaze to reduce
OR - Stir in 1 teaspoon cornstarch mixed with 1 tablespoon water and cook for ~10 minutes.
6. Serve
- Spoon carrots into a serving dish.
- Drizzle with remaining glaze from the slow cooker.
- Garnish with fresh parsley if desired.
Tips & Variations
- Extra rich: Add 2 more tbsp butter.
- More Amish-style sweetness: Add 1–2 tbsp maple syrup.
- Savory twist: Add ½ tsp garlic powder.
- Holiday flavor: Add a pinch of nutmeg or allspice.
