Spinach & Cheese Puff Pastry Squares

Serves: 12–16 squares

Ingredients

For the Filling

  • 1 cup chopped fresh spinach (or ¾ cup thawed frozen spinach, well drained)
  • ½ cup crumbled feta cheese
  • ½ cup shredded mozzarella or cheddar
  • 1 garlic clove, minced (optional)
  • 2 tbsp cream cheese or ricotta (optional for creaminess)
  • Salt & pepper, to taste
  • Pinch of nutmeg (optional but great with spinach)

For the Pastry

  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

1. Preheat

Preheat oven to 400°F (200°C).
Line a baking tray with parchment paper.


2. Make the Spinach–Cheese Filling

In a bowl, combine:

  • chopped spinach
  • feta
  • mozzarella (or cheddar)
  • garlic
  • cream cheese/ricotta (optional)
  • salt, pepper, nutmeg

Mix until evenly combined.


3. Prepare the Puff Pastry

  1. Unroll or unfold the thawed puff pastry on a lightly floured surface.
  2. Cut into 12–16 equal squares using a knife or pizza cutter.
  3. Place squares on the baking sheet.

4. Fill the Pastry Squares

  1. Spoon 1 tablespoon of filling onto the center of each square.
  2. You can choose your style:
    • Open squares: leave filling exposed.
    • Folded parcels: fold two opposite corners toward the center and press to seal.
    • Mini tarts: press pastry into mini muffin tins and fill.

5. Brush & Bake

  1. Brush pastry edges with egg wash for golden color.
  2. Bake 14–18 minutes, or until puffed and golden brown.

6. Serve

Serve warm or room temperature with:

  • Sweet chili sauce
  • Garlic yogurt dip
  • Marinara
  • Honey drizzle (trust me—it works!)

Optional Upgrades

Add chili flakes or diced jalapeño to the filling.

🧀 Extra cheesy

Increase mozzarella or add Parmesan.
