- 1 cup heavy cream (or half-and-half for lighter)
- ½ cup freshly grated Parmesan
- ¼ cup beef broth (or water)
- ½ tsp garlic powder (optional)
- Salt & pepper, to taste
- Optional: pinch of red pepper flakes
- Optional: 1–2 tbsp chopped parsley
⭐ Instructions
1. Season & Prep the Steak
Pat steak cubes dry with paper towels (this ensures browning).
Season generously with salt and pepper (+ paprika or Italian seasoning if using).
2. Sear the Steak Bites
- Heat a large skillet over medium-high heat.
- Add olive oil.
- Add steak in a single layer (do not overcrowd).
- Sear 2–3 minutes per side until browned and medium-rare.
- Remove steak to a bowl and cover loosely.
Tip: Work in two batches if necessary for best sear.
3. Make the Garlic Butter
- In the same pan, reduce heat to medium.
- Add 2 tbsp butter.
- Once melted, add minced garlic and cook 30 seconds until fragrant (not browned).
Pour garlic butter over the cooked steak bites OR return the steak to the pan and toss briefly.
Remove steak again before making the sauce.
4. Make the Creamy Parmesan Sauce
In the same skillet:
- Add 1 tbsp butter.
- Pour in heavy cream and beef broth.
- Stir and simmer for 2–3 minutes until slightly thickened.
- Add Parmesan, stirring until melted and smooth.
- Season with salt, pepper, and optional red pepper flakes.
Simmer 1–2 more minutes until luxuriously creamy.
5. Combine
Return the steak bites (with any juices) to the skillet.
Toss gently until coated in the Parmesan sauce.
Cook for 1 minute to warm through—avoid overcooking.
6. Serve
Garnish with chopped parsley.
Serve hot with:
- Mashed potatoes
- Pasta
- Steamed rice
- Cauliflower mash
- Crusty bread
- Roasted veggies
