🍗 Chicken Spinach & Mushroom Low-Carb Oven Dish

🧾 Ingredients

  • 6 thin-sliced chicken breasts
  • 1 small bag fresh baby spinach
  • 8 oz shredded mozzarella cheese
  • 1 container (8 oz) green onion cream cheese
  • ¼ cup olive oil
  • ½ cup chicken broth
  • 1 dash black pepper
  • 1 dash herb & garlic seasoning
  • Optional but recommended:
    • 8 oz sliced mushrooms
    • 2–3 cloves garlic, minced
    • ¼ cup grated Parmesan (for extra flavor)

Instructions

1. Preheat Oven

  • Preheat your oven to 375°F (190°C).
  • Lightly grease a 9×13 baking dish.

2. Prepare the Chicken

  1. Pat the chicken breasts dry.
  2. Place them in a single layer in the prepared baking dish.
  3. Drizzle with ¼ cup olive oil.
  4. Sprinkle with black pepper and herb & garlic seasoning.
  5. (Optional) Add garlic or mushrooms directly on top of the chicken for extra flavor.

3. Add the Spinach

  • Spread the fresh baby spinach over the chicken evenly.
    (It will shrink as it bakes.)

4. Make the Creamy Sauce

  1. In a medium bowl, combine:
    • Green onion cream cheese
    • ½ cup chicken broth
  2. Mix until smooth.
    (If too thick, microwave 15–20 seconds to soften.)
  3. Pour or dollop this mixture over the spinach and chicken.

5. Add the Cheese

  • Sprinkle the 8 oz shredded mozzarella evenly over the top.
  • Add Parmesan if using.

6. Bake

  • Cover with foil and bake for 25 minutes.
  • Remove foil and bake another 15–20 minutes, or until:
    • Chicken is fully cooked (165°F internal)
    • Sauce is bubbling
    • Cheese is melted and lightly golden

7. Rest & Serve

Let the dish rest 5 minutes before serving so the sauce thickens.
