Marinated Cucumbers & Onions (Quick & Easy Recipe)

Ingredients

  • 2 large cucumbers, thinly sliced
  • 1 medium onion, thinly sliced (white, yellow, or red all work)
  • 1 cup water
  • ½ cup white vinegar (apple cider vinegar also works)
  • ¼ cup sugar (adjust to taste: more for sweet, less for tangy)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional add-ins:
    • 2 tablespoons fresh dill (or 1 teaspoon dried)
    • 1–2 garlic cloves, minced
    • Pinch of red pepper flakes
    • 1 tablespoon olive oil
    • 1 teaspoon mustard seeds

Instructions

  1. Prepare the vegetables
    • Thinly slice cucumbers (peel if you prefer).
    • Thinly slice the onion into rings or half-moons.
    • Add both to a large bowl or jar.
  2. Mix the marinade
    In a small bowl, whisk together:
    • Water
    • Vinegar
    • Sugar
    • Salt
    • Black pepper
      Stir until the sugar is fully dissolved.
  3. Combine
    • Pour the marinade over the cucumbers and onions.
    • Add dill, garlic, or any optional seasonings if using.
    • Stir to coat evenly.
  4. Marinate
    • Cover and refrigerate at least 1 hour for quick marination.
    • For best flavor, chill 4–24 hours. The longer they sit, the better they taste.
  5. Serve
    • Serve cold as a refreshing side dish, salad, or topping for sandwiches, BBQ, or grilled meats.

Storage

  • Keeps well in the fridge for up to 5–7 days.
  • Flavor gets stronger over time.
