Sugar-Free Holiday Cookie Bars (Crowd Favorite!)
Ingredients
1 cup (225 g) unsalted butter, softened
¾ cup sugar-free sweetener (erythritol, monk fruit, or allulose)
2 large eggs
2 tsp vanilla extract
2 cups (240 g) almond flour or 1 ¾ cups (220 g) all-purpose flour
½ tsp baking soda
½ tsp salt
1 cup sugar-free chocolate chips or chopped nuts or dried-fruit-style sugar-free mix
Optional: 1 tsp cinnamon or ½ tsp almond extract
Instructions
1. Prepare the oven & pan
Preheat oven to 350°F (175°C) .
Line a 9×13 inch pan with parchment paper.
2. Make the dough
In a bowl, beat butter + sugar-free sweetener for 2 minutes until creamy.
Add eggs and vanilla ; beat again.
In a separate bowl, whisk:
Almond (or all-purpose) flour
Baking soda
Salt
Add dry ingredients to wet and mix until just combined.
Fold in sugar-free chocolate chips or preferred add-ins.
3. Bake
Spread the dough evenly into the pan.
Bake 18–22 minutes , or until edges are golden and center is set.
Cool fully before cutting — they firm up as they cool.
4. Freeze & Serve
Freeze cut bars in layers with parchment between them.
When ready to serve, let bars thaw for 10 minutes — they taste fresh-baked again!
Tips for the Best Sugar-Free Bars
Allulose gives the softest texture (almost gooey).
Erythritol makes them firmer with a slight cookie crunch.
Add ¼ tsp maple extract for holiday flavor.
Add a sprinkle of salt flakes on top for a bakery finish.
