🍗🧀 Cheesy Chicken Rolls
⭐ Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup shredded mozzarella (or provolone)
- ½ cup cream cheese (softened)
- ¼ cup grated Parmesan
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, chopped (or 1 tsp dried)
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
🥣 Instructions
1. Prep the chicken
- Preheat oven to 400°F (205°C).
- Butterfly each chicken breast and gently pound to an even thickness (¼–½ inch).
- Season both sides with salt, pepper, and paprika.
2. Make the cheese filling
In a bowl, mix:
- Cream cheese
- Mozzarella
- Parmesan
- Garlic
- Parsley
- Italian seasoning
3. Fill and roll
- Spread a spoonful of the cheese mixture over each chicken breast.
- Roll tightly from the narrower end and secure with toothpicks.
- Brush the outside lightly with olive oil.
4. Sear (optional but best)
- Heat a skillet over medium-high.
- Sear chicken rolls for 1–2 minutes per side until lightly golden.
5. Bake
- Transfer to a baking dish.
- Bake 20–25 minutes, or until internal temperature reaches 165°F (74°C).
🥔 Herb-Roasted Potatoes
⭐ Ingredients
- 1 ½ lbs baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1 tsp garlic powder
- ¾ tsp salt
- ½ tsp black pepper
🥣 Instructions
1. Season
In a bowl, toss potatoes with:
- Olive oil
- Rosemary
- Thyme
- Garlic powder
- Salt & pepper
2. Roast
Spread on a baking sheet and roast at 425°F (220°C) for 25–30 minutes, flipping once.
Potatoes should be golden and crispy.
🥒🍅 Creamy Tomato-Cucumber Salad
⭐ Ingredients
- 1 large cucumber, diced
- 1 cup cherry tomatoes, halved
- ¼ red onion, thinly sliced
- ¼ cup sour cream
- 2 tbsp mayonnaise
- 1 tbsp lemon juice
- 1 tbsp fresh dill (or 1 tsp dried)
- ½ tsp salt
- ¼ tsp pepper
🥣 Instructions
1. Make the dressing
Whisk together:
- Sour cream
- Mayo
- Lemon juice
- Dill
- Salt & pepper
2. Combine
- Add cucumber, tomatoes, and onion into the dressing.
- Toss gently.
- Chill until serving.

Plate each dish with:
- 1 cheesy chicken roll (sliced into medallions for presentation)
- A serving of crispy herb-roasted potatoes
