Roasted Vegetables & Base
- 2 cups butternut squash, cubed
- 2 cups Brussels sprouts, halved
- 2 cups sweet potatoes, cubed
- 1 large red onion, cut into wedges
- 1 red bell pepper, sliced
- 2 tbsp olive oil
- Salt & black pepper, to taste
- 1 tsp smoked paprika
- ½ tsp garlic powder
Crisp Prosciutto & Cheeses
- 6 slices prosciutto (or pancetta)
- ½ cup crumbled feta or soft goat cheese
- ½ cup ricotta or burrata (Australian-style if available)
Cranberry–Chili Honey Glaze
- ¼ cup honey
- 2 tbsp cranberry sauce or cranberry juice concentrate
- ½–1 tsp chili flakes or fresh chopped chili
- 1 tbsp lemon or lime juice
- ½ tsp finely grated fresh ginger (optional)
- Small pinch of wattleseed or lemon myrtle (optional, for Aussie-native flavor)
Finishing & Garnish
- Fresh parsley, mint, or baby basil
- Toasted macadamias or almonds

1. Roast the Veggies
- Preheat oven to 425°F (220°C).
- Line a baking sheet with parchment.
- In a large bowl, toss together:
- butternut squash
- sweet potatoes
- Brussels sprouts
- red onion
- red bell pepper
with olive oil, salt, pepper, smoked paprika, and garlic powder.
- Spread into an even layer.
- Roast 30–40 minutes, stirring once halfway through, until golden brown and caramelized.
2. Crisp the Prosciutto
- Place prosciutto slices on a small parchment-lined tray.
- Bake at the same temperature for 8–10 minutes, or until crisp like bacon.
- Cool, then break into shards.
3. Make the Cranberry–Chili Honey Glaze
- In a small saucepan, combine:
- honey
- cranberry sauce or concentrate
- chili
- lemon/lime juice
- (optional ginger + wattleseed/lemon myrtle)
- Warm over low heat, stirring until smooth and glossy (2–3 minutes).
- Set aside.
4. Assemble the Feast Platter
- Spread ricotta or burrata in rustic “clouds” around the platter.
- Pile the roasted vegetables on top.
- Sprinkle crumbled feta or goat cheese over the warm veggies.
- Drizzle generously with the cranberry–chili honey glaze.
- Add crisp prosciutto shards for texture.
