⭐ Servings
6–8 small dessert servings
🥣 Ingredients
Cream Cheese Base
- 8 oz cream cheese, softened
- 1/2 cup heavy whipping cream
- 1/3 cup powdered keto sweetener (erythritol, allulose, or monk fruit blend)
- 1 tsp vanilla extract
- 1/2–1 tsp banana extract (adjust to taste—start with 1/2 tsp)
- Pinch of salt
Optional Add-ins
- 1/2 cup keto whipped cream (folded in for extra fluff)
- 1–2 tbsp sugar-free vanilla pudding mix (optional, but makes it thick & pudding-like)
- Keto vanilla wafers or pecans for topping
- Unsweetened coconut flakes
👩🍳 Full Recipe Instructions
1. Whip the heavy cream
In a chilled bowl:
- Add the heavy cream
- Beat until stiff peaks form
Set aside (this will be folded in later).
2. Make the cheesecake mixture
In another bowl, beat together:
- softened cream cheese
- powdered keto sweetener
- vanilla extract
- banana extract
- pinch of salt
Beat until smooth, creamy, and lump-free.
3. Combine & fluff
Gently fold the whipped cream into the cream cheese mixture with a spatula.
Fold until fully blended and fluffy—don’t overmix.
4. Optional pudding upgrade
For thicker, more “pudding cheesecake” texture, mix in:
- 1–2 tbsp sugar-free vanilla pudding mix
This thickens as it chills.
5. Chill
Cover and refrigerate for 1–2 hours.
The flavor deepens and texture becomes rich and mousse-like.
6. Serve
Scoop into cups or bowls and top with:
- Keto whipped cream
- Crushed keto vanilla wafers
- Chopped pecans
- Light sprinkle of cinnamon
- Sugar-free chocolate chips
🌟 Tips & Variations
Make it extra banana-y
Add both banana and vanilla extract—this mimics real banana pudding flavor.
Lower-carb version
Use allulose for the smoothest, least gritty texture.
Frosting version
This fluff also works as a frosting for keto cupcakes or a filling for keto cakes.
Layered parfait
Layer fluff + keto cookies + whipped cream = instant keto banana pudding parfait.
