🥣 Cabbage Soup (Simple & Healthy)

Ingredients

  • 1 large cabbage, chopped
  • 2 small onions, diced
  • 2 cans stewed tomatoes (14–15 oz each)
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1 bell pepper, chopped (any color)
  • 1–2 cloves garlic, minced
  • 6–8 cups vegetable or chicken broth
  • 1–2 tbsp olive oil (optional, for sautéing)
  • Salt and pepper to taste
  • Optional seasonings:
    • 1 tsp paprika
    • 1 tsp dried thyme
    • 1–2 bay leaves
    • A pinch of chili flakes for heat

Instructions

  1. Prep the vegetables
    Chop the cabbage, onions, carrots, celery, and bell pepper.
  2. Sauté aromatics (optional for more flavor)
    • In a large pot, heat olive oil over medium heat.
    • Add onions and garlic; cook until softened (about 3–4 minutes).
  3. Add vegetables & tomatoes
    • Add the carrots, celery, bell pepper, and cabbage.
    • Pour in the canned stewed tomatoes (with their juices).
  4. Add broth & seasonings
    • Pour in enough broth to cover the vegetables.
    • Add salt, pepper, and any additional herbs/spices you like.
    • Stir well.
  5. Simmer
    • Bring to a boil, then reduce heat to low.
    • Cover and simmer for 25–35 minutes, until vegetables are tender.
  6. Taste & adjust seasoning
    Add more salt, pepper, or spices if needed.

Serving Suggestions

  • Enjoy as a light meal on its own
  • Add cooked chicken, beans, or rice for a heartier version
  • Serve with crusty bread
