🥔🍳 Quick German Potato & Egg Skillet (5–10 Minutes)

Ingredients

  • 4–5 medium potatoes, peeled & cut into small cubes
  • 1 tbsp olive oil
  • 2 eggs
  • 1 tsp salt
  • ¼ tsp black pepper
  • ½ tsp paprika or red pepper
  • ¼ cup chopped green onions
  • 1 tbsp butter
  • 1 tbsp flour
  • 150 ml (⅔ cup) cream
  • 100 g (1 cup) grated mozzarella
  • 50 g grated parmesan
  • 1 small onion, diced
  • 1 garlic clove, chopped
  • ½ tsp thyme

Instructions

1. Pan-Fry the Potatoes

  • Heat 1 tbsp olive oil in a skillet over medium-high heat.
  • Add the potato cubes, salt, pepper, and paprika.
  • Fry for 4–5 minutes, stirring occasionally, until lightly golden.

The small cubes cook very fast—perfect for a 5–10 minute recipe!


2. Add Onion & Garlic

  • Add the diced onion and garlic to the pan.
  • Cook 1 minute until fragrant.

3. Make the Quick Cream Sauce (in the same pan)

  • Push the potatoes to one side of the skillet.
  • Add 1 tbsp butter to the empty side.
  • Melt and stir in 1 tbsp flour, cooking 30 seconds to form a roux.
  • Slowly pour in the cream, stirring until thickened.
  • Mix the potatoes back into the sauce.

4. Add Cheeses

  • Stir in the mozzarella and parmesan until melted and creamy.
  • Add thyme and adjust salt/pepper to taste.

(The mixture should now be creamy, cheesy, and thick.)


5. Add the Eggs

  • Make two small wells in the potato mixture.
  • Crack 2 eggs into the wells.
  • Reduce heat to low, cover the pan, and cook 2–3 minutes, until eggs are soft-set or cooked to your liking.

6. Finish & Serve

  • Sprinkle with chopped green onions.
  • Serve hot!
  • Optionally add more paprika or a pinch of chili flakes on top.

⭐ Tips

  • For extra crisp, you can broil the skillet for 1 minute after adding cheese.
  • Add bacon or ham for a heartier traditional German skillet.
  • Use milk instead of cream for a lighter version.
