Broccoli Rice Chicken & Cheese Casserole

📋 Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 2 cups cooked rice (white or brown)
  • 2 cups broccoli florets (fresh or frozen)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1½ cups shredded cheddar cheese, divided
  • ½ cup milk (optional, for creamier sauce)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp black pepper
  • Salt to taste
  • Optional topping: crushed Ritz crackers or breadcrumbs mixed with 2 tbsp melted butter

1. Preheat the oven

  • Preheat your oven to 350°F (175°C).
  • Grease a 9×13-inch baking dish or similar casserole dish.

2. Prepare the broccoli

  • Fresh broccoli: Steam for 3–4 minutes until just tender.
  • Frozen broccoli: Thaw and drain excess water.
    (Avoid overcooking; it will continue cooking in the oven.)

3. Mix the casserole

In a large bowl, combine:

  • Cream of chicken soup
  • Sour cream
  • 1 cup shredded cheddar cheese
  • Milk (if using)
  • Garlic powder
  • Onion powder
  • Salt & pepper

Whisk until smooth.

Add in:

  • Cooked chicken
  • Cooked rice
  • Broccoli

Mix everything until fully combined.


4. Assemble

  • Spread the mixture evenly into your greased casserole dish.
  • Sprinkle the remaining ½ cup cheddar cheese on top.
  • Add optional cracker/breadcrumb topping if desired.

5. Bake

  • Bake 25–30 minutes, or until the casserole is hot and bubbly and the top is golden.

6. Serve

Let it rest for 5 minutes, then scoop and serve!
