🍲 Creamy Sausage Pasta Soup

Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 medium onion, diced
  • 3–4 cloves garlic, minced
  • 1 tbsp olive oil (if needed)
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1½ cups small pasta (ditalini, shells, elbows, etc.)
  • 1 cup heavy cream (or half-and-half for lighter version)
  • 2 cups fresh spinach or kale, chopped
  • 1 tsp Italian seasoning
  • ½ tsp paprika (optional)
  • Salt & pepper to taste
  • ½ cup grated Parmesan (for stirring in + topping)

👩‍🍳 Instructions

1. Brown the Sausage

  1. Heat a large pot over medium heat.
  2. Add the sausage and cook until browned, breaking it into crumbles.
  3. If needed, add olive oil. Drain excess grease if there’s too much.

2. Add Onion & Garlic

  • Add diced onion and cook 3–4 minutes until soft.
  • Stir in garlic and cook 30 seconds until fragrant.

3. Add Broth & Tomatoes

Pour in:

  • chicken broth
  • diced tomatoes (with juices)
  • Italian seasoning
  • paprika
  • salt & pepper

Bring to a gentle boil.

4. Add Pasta

  • Add pasta directly into the pot.
  • Lower heat to medium and cook 8–12 minutes (depending on pasta type) until tender.

5. Make It Creamy

Stir in:

  • heavy cream
  • grated Parmesan

Simmer 2–3 minutes, but don’t boil hard (so the cream doesn’t split).

6. Add Greens

  • Stir in spinach or kale.
  • Cook 1–2 minutes until wilted.

7. Serve

Taste and adjust salt/pepper.
Serve topped with:

  • extra Parmesan
  • red pepper flakes
  • fresh basil or parsley

Creamy, cozy, and full of flavor! 😍🍜

⭐ Optional Add-Ins

  • Sliced mushrooms
  • Sun-dried tomatoes
  • Crumbled bacon
  • A splash of white wine
