🍐 Pear, Brie, and Cranberry Flatbread with Thyme
Ingredients (Serves 4)
- 1 flatbread or naan
- 75 g Brie cheese, sliced
- ½ cup thinly sliced pear (any variety)
- 2–3 tbsp cranberry sauce or dried cranberries
- 1 tsp fresh thyme leaves (or ¼ tsp dried thyme)
- 1–2 tsp honey (optional but recommended)
- 1 tsp olive oil
- A pinch of salt & black pepper
- Optional toppings: chopped walnuts, arugula, balsamic glaze
Instructions
1. Preheat Oven
- Preheat to 400°F (200°C).
- Line a baking sheet with parchment for easy cleanup.
2. Prep the Flatbread
- Place the flatbread on the baking sheet.
- Brush lightly with olive oil.
- Sprinkle a small pinch of salt and pepper.
3. Add the Brie
- Arrange Brie slices evenly across the flatbread.
- The cheese will melt and create the creamy base.
4. Add Pears & Cranberries
- Layer thin pear slices over the Brie.
- Add small spoonfuls of cranberry sauce or scatter dried cranberries.
- Sprinkle thyme leaves over the top.
5. Bake
- Bake for 8–12 minutes, or until:
- Brie is melted
- Pears are soft
- Edges of the flatbread are golden and crisp
6. Finish & Serve
- Drizzle lightly with honey for sweetness (optional but amazing).
- Add extras if desired:
- Chopped walnuts for crunch
- A handful of fresh arugula
- A drizzle of balsamic glaze

- For extra crispiness, prebake the flatbread 2–3 minutes before topping.
- Use fig jam instead of cranberry for a fall variation.
