Ingredients

For the Chicken

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt & black pepper, to taste
  • 1 teaspoon Italian seasoning
  • 4 cloves garlic, minced

For the Alfredo Sauce

  • 2 tablespoons butter
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder (optional, for extra flavor)
  • 1 tablespoon chopped fresh parsley (optional)

For the Pasta

  • 12 oz linguine
  • Salt (for pasta water)

Instructions

1. Cook the Linguine

  1. Bring a large pot of salted water to a boil.
  2. Add linguine and cook until al dente (about 9–11 minutes).
  3. Reserve ½ cup of pasta water, then drain and set aside.

2. Cook the Chicken

  1. Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat.
  2. Season chicken pieces with salt, pepper, and Italian seasoning.
  3. Add chicken to the pan in a single layer; cook 5–7 minutes until golden and fully cooked.
  4. Add minced garlic, sauté 1 minute until fragrant.
  5. Transfer chicken to a bowl and set aside.

3. Make the Alfredo Sauce

  1. In the same skillet, melt 2 tablespoons butter over medium heat.
  2. Pour in heavy cream and stir, bringing it to a gentle simmer.
  3. Reduce heat to low and slowly whisk in Parmesan cheese until melted and smooth.
  4. Season with salt, pepper, and garlic powder if using.
  5. If the sauce is too thick, stir in a splash of reserved pasta water.

4. Combine Everything

  1. Return the cooked chicken (with its juices) to the pan.
  2. Add the cooked linguine.
  3. Toss until everything is coated in the creamy Alfredo sauce.
  4. Simmer 1–2 minutes to marry the flavors.
  5. Garnish with parsley if desired.
