Irresistible Chocolate Mani

(Moist Chocolate Loaf / Cake)

Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar, rested 10 min)
  • ½ cup vegetable oil (or melted butter)
  • 2 teaspoons vanilla extract
  • 1 cup hot water or hot coffee (for richer chocolate flavor)

Instructions

1. Prepare the Pan

  • Preheat oven to 350°F (175°C).
  • Grease and flour a 9×5 inch loaf pan, or line with parchment.

2. Mix Dry Ingredients

In a large bowl, whisk together:

  • flour
  • sugar
  • cocoa powder
  • baking soda
  • baking powder
  • salt

Make sure there are no lumps.


3. Mix Wet Ingredients

In a separate bowl, whisk together:

  • eggs
  • buttermilk
  • oil
  • vanilla extract

4. Combine

  • Pour the wet mixture into the dry mixture and stir until just combined.
  • Slowly pour in the hot water or hot coffee, mixing gently until the batter is smooth.
    • Batter will be thin — that’s what makes it extra moist!

5. Bake

  • Pour the batter into the prepared loaf pan.
  • Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.

6. Cool

Let the loaf cool in the pan for 10 minutes, then transfer to a rack to cool completely.


Optional Topping (Highly Recommended 😋)

Chocolate Glaze

  • ½ cup chocolate chips
  • 2 tablespoons butter
  • 2 tablespoons milk

Melt together until smooth and pour over the cooled loaf.
