  • 1 can (10 oz) Rotel tomatoes (diced tomatoes with green chiles)
  • 1 can (15 oz) black beans, drained & rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) pinto beans (optional but great for texture)
  • 1 can (8 oz) tomato sauce
  • 1–2 cups beef broth (start with 1 cup; add more if you prefer a thinner soup)
  • 1 block (8 oz) cream cheese, softened & cut into cubes
  • 1 cup heavy cream (or half-and-half)

Seasonings (optional but recommended)

  • ½ tsp cumin
  • ½ tsp smoked paprika
  • Salt & pepper to taste

Toppings

  • Shredded cheddar or Mexican blend cheese
  • Sour cream
  • Cilantro
  • Tortilla chips or strips
  • Avocado
  • Lime wedges

🍲 Instructions

1. Brown the Beef

  • In a large pot or Dutch oven, cook the ground beef over medium-high heat until fully browned.
  • Drain excess fat.

2. Add Onion & Garlic

  • Add diced onion; cook 3–4 minutes until softened.
  • Stir in garlic and cook for about 30 seconds.

3. Add Seasoning

  • Sprinkle in the taco seasoning and chili powder.
  • Stir to coat the beef evenly.

4. Build the Soup

Add the following into the pot:

  • Rotel
  • Black beans
  • Corn
  • Pinto beans (if using)
  • Tomato sauce
  • 1 cup beef broth

Stir well and bring the mixture to a gentle simmer.

5. Make It Creamy

  • Add the cream cheese cubes.
  • Stir continuously until fully melted and smooth (2–5 minutes).
  • Lower the heat to avoid scorching.

6. Add Heavy Cream

  • Pour in the heavy cream and gently stir.
  • Let the soup simmer on low for 5–10 minutes.
  • Add more broth if you want it thinner.

7. Taste & Adjust

  • Add salt, pepper, and extra taco seasoning as needed.
