🥘 Ingredients
Main Ingredients
- 1 lb (450 g) ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 packet taco seasoning (about 2 tbsp)
- 1 tsp chili powder (optional)
- 1 can (10 oz) Rotel tomatoes (diced tomatoes with green chiles)
- 1 can (15 oz) black beans, drained & rinsed
- 1 can (15 oz) corn, drained
- 1 can (15 oz) pinto beans (optional but great for texture)
- 1 can (8 oz) tomato sauce
- 1–2 cups beef broth (start with 1 cup; add more if you prefer a thinner soup)
- 1 block (8 oz) cream cheese, softened & cut into cubes
- 1 cup heavy cream (or half-and-half)
Seasonings (optional but recommended)
- ½ tsp cumin
- ½ tsp smoked paprika
- Salt & pepper to taste
Toppings
- Shredded cheddar or Mexican blend cheese
- Sour cream
- Cilantro
- Tortilla chips or strips
- Avocado
- Lime wedges
🍲 Instructions
1. Brown the Beef
- In a large pot or Dutch oven, cook the ground beef over medium-high heat until fully browned.
- Drain excess fat.
2. Add Onion & Garlic
- Add diced onion; cook 3–4 minutes until softened.
- Stir in garlic and cook for about 30 seconds.
3. Add Seasoning
- Sprinkle in the taco seasoning and chili powder.
- Stir to coat the beef evenly.
4. Build the Soup
Add the following into the pot:
- Rotel
- Black beans
- Corn
- Pinto beans (if using)
- Tomato sauce
- 1 cup beef broth
Stir well and bring the mixture to a gentle simmer.
5. Make It Creamy
- Add the cream cheese cubes.
- Stir continuously until fully melted and smooth (2–5 minutes).
- Lower the heat to avoid scorching.
6. Add Heavy Cream
- Pour in the heavy cream and gently stir.
- Let the soup simmer on low for 5–10 minutes.
- Add more broth if you want it thinner.
7. Taste & Adjust
- Add salt, pepper, and extra taco seasoning as needed.
