White Chocolate Strawberry Cheesecake

Ingredients

For the Crust

  • 1 ½ cups graham cracker crumbs (or digestive biscuits)
  • ¼ cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • Optional: 1 tsp vanilla extract or a pinch of salt

For the White Chocolate Cheesecake Filling

  • 16 oz (450 g) cream cheese, softened
  • ¾ cup granulated sugar
  • 1 cup sour cream (or plain Greek yogurt)
  • 8 oz (225 g) white chocolate, melted and slightly cooled
  • 3 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice (optional, balances sweetness)

For the Strawberry Topping

  • 2 cups fresh strawberries, sliced
  • ¼ cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 2 tbsp water
  • Optional: extra fresh berries for garnish

Instructions

1. Prepare the Crust

  1. Preheat oven to 325°F (160°C).
  2. Mix graham crumbs, sugar, and melted butter until evenly moistened.
  3. Press firmly into the bottom of a 9-inch springform pan.
  4. Bake for 8–10 minutes, then cool while preparing filling.

2. Make the White Chocolate Filling

  1. Melt white chocolate in a microwave-safe bowl in 20–30 second intervals, stirring until smooth. Let cool slightly.
  2. In a large bowl, beat cream cheese until smooth and fluffy.
  3. Add sugar and mix until combined.
  4. Add sour cream, vanilla, and lemon juice.
  5. Mix in the melted white chocolate.
  6. Add eggs one at a time, mixing on low speed until just combined (do not overmix).

3. Bake the Cheesecake

  1. Pour filling over the cooled crust.
  2. Wrap the outside of the pan in foil and place in a water bath (optional but prevents cracking).
  3. Bake at 325°F (160°C) for 60–75 minutes, until the edges are set but center still jiggles slightly.
  4. Turn off oven, crack door open, and cool inside for 1 hour.
  5. Refrigerate at least 4 hours or overnight.

4. Prepare Strawberry Topping

  1. In a saucepan, combine strawberries, sugar, and lemon juice.
  2. In a small bowl, mix cornstarch and water; pour into saucepan.
  3. Cook over medium heat until strawberries soften and mixture thickens (5–7 minutes).
  4. Cool completely.

5. Assemble

  • Spread cooled strawberry topping over chilled cheesecake.
  • Garnish with additional fresh strawberries and shaved white chocolate if desired.
