Ingredients

  • 1 large head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked if you have it)
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

  • ¼ teaspoon chili flakes (for heat)
  • 2 tablespoons grated Parmesan (extra crisp & flavor)
  • Fresh parsley or cilantro, chopped
  • Squeeze of lemon juice after roasting

Instructions

1️⃣ Preheat

  • Preheat oven to 425°F (220°C)
  • Line a baking sheet with parchment paper

2️⃣ Season

  • Place cauliflower florets in a large bowl
  • Add olive oil, garlic powder, paprika, onion powder, salt & pepper
  • Toss until evenly coated

3️⃣ Arrange

  • Spread cauliflower on the baking sheet in a single layer
  • Don’t overcrowd (this is key for crispiness)

4️⃣ Roast

  • Roast for 25–30 minutes
  • Flip halfway through
  • For extra crisp edges, broil for 2–3 minutes at the end

5️⃣ Finish

  • Sprinkle Parmesan (if using) and roast 2 more minutes
