🛒 Ingredients

  • 3 cups cooked, shredded chicken
  • 2 cups corn (fresh, frozen, or canned & drained)
  • 1 cup sour cream
  • ½ cup mayonnaise
  • 1½ cups shredded cheese (Mexican blend or Monterey Jack)
  • ½ cup crumbled cotija cheese (or feta)
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon cumin (optional)
  • Juice of 1 lime
  • Salt & pepper, to taste
  • ½ cup chopped green onions or cilantro
  • Optional topping: crushed tortilla chips or extra cheese

🔥 Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, mix sour cream, mayonnaise, lime juice, and spices until smooth.
  3. Stir in chicken, corn, shredded cheese, cotija, and green onions/cilantro.
  4. Spread mixture evenly into the prepared baking dish.
  5. Top with extra cheese or crushed tortilla chips, if using.
  6. Bake uncovered for 25–30 minutes, until bubbly and lightly golden.
  7. Let rest 5 minutes before serving.
