Tiramisu Pudding Cups

🛒 Ingredients
For the Cream Layer
1 cup heavy cream
8 oz (225 g) mascarpone cheese, softened
⅓ cup powdered sugar
1 tsp vanilla extract
For the Coffee Layer
1 cup strong brewed coffee or espresso, cooled
2 tbsp granulated sugar
1–2 tbsp coffee liqueur (optional)
For the Pudding Layer
1 box (3.4 oz / 96 g) vanilla instant pudding mix
1½ cups cold milk
For Assembly
12–16 ladyfinger cookies, broken
Unsweetened cocoa powder, for dusting
Dark chocolate shavings (optional)
👩🍳 Instructions
1️⃣ Make the Cream Layer
In a bowl, beat the heavy cream until soft peaks form.
In a separate bowl, mix mascarpone, powdered sugar, and vanilla until smooth.
Gently fold the whipped cream into the mascarpone mixture. Set aside.
2️⃣ Prepare the Coffee Mixture
Stir sugar into the cooled coffee until dissolved.
Add coffee liqueur if using.
3️⃣ Make the Pudding
Whisk the pudding mix with cold milk for about 2 minutes until thick.
Let it sit for 5 minutes to fully set.
4️⃣ Assemble the Cups
In small cups or jars, layer in this order:
Ladyfinger pieces (lightly dipped in coffee)
Pudding layer
Mascarpone cream layer
Repeat layers once more if space allows.
5️⃣ Chill
Cover and refrigerate for at least 2 hours (overnight is even better).
6️⃣ Finish & Serve
Before serving, dust generously with cocoa powder.
Top with chocolate shavings if desired.
