Roasted Sausage, Potatoes & Peppers

Ingredients

  • 6–8 sausages (pork, chicken, or beef)
  • 1½ lbs baby potatoes, halved
  • 1 red bell pepper, sliced
  • 1 yellow or red onion, cut into wedges
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika (sweet or smoked)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano or thyme
  • Fresh parsley, chopped (for garnish – optional)

Instructions

  1. Preheat the oven
    Set oven to 400°F (200°C).
  2. Prepare the vegetables
    In a large bowl, add potatoes, bell pepper, and onion.
    Drizzle with olive oil and season with salt, pepper, paprika, garlic powder, and oregano. Toss well.
  3. Assemble the tray
    Spread the vegetables evenly on a baking tray.
    Nestle the sausages on top (you can lightly brush them with oil for extra browning).
  4. Roast
