Ingredients:

  • 1 cup (200g) all-purpose flour
  • 3 tablespoons (40g) granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (240ml) sourdough starter (active or discard — both work!)
  • ¾ cup (180ml) milk (or plant-based milk)
  • 1 large egg
  • 2 tablespoons (30g) melted butter or oil
  • 1 teaspoon vanilla extract (optional)

Instructions:

  1. Mix dry ingredients:
    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. Mix wet ingredients:
    In another bowl, combine the sourdough starter, milk, egg, melted butter, and vanilla extract (if using). Mix well.
  3. Combine:
    Pour the wet ingredients into the dry ingredients. Gently mix just until combined. Don’t overmix — a few lumps are fine. Let the batter rest for 5–10 minutes.
  4. Cook the pancakes:
    Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. Pour ¼ cup of batter for each pancake. Cook until bubbles form on the surface and the edges look set (about 2–3 minutes), then flip and cook the other side until golden brown.
  5. Serve:
    Serve warm with butter, maple syrup, fresh fruit, or any toppings you love.

Tips:

  • If your sourdough starter is very thick, you may need a little extra milk.
  • For extra fluffy pancakes, let the batter rest 10–15 minutes before cooking.
  • You can make the batter the night before and keep it in the fridge for an even deeper sourdough flavor.
