Cheesy Burrata Crostini with Prosciutto and Peaches
Ingredients:
1 loaf of sourdough or French baguette, sliced
⅓ cup grated Parmesan cheese
⅓ cup grated Pecorino cheese
1 clove garlic, grated
2 tablespoons fresh thyme leaves
2 tablespoons melted butter
4 ounces prosciutto
8 ounces burrata cheese, at room temperature
2 ripe peaches, thinly sliced
Hot honey, for drizzling
Fresh basil leaves, for garnish
Instructions:
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Prepare the cheesy topping: In a small bowl, mix together the grated Parmesan, Pecorino, garlic, thyme, and melted butter.
Toast the bread: Arrange the baguette slices on the baking sheet. Spoon the cheese mixture evenly on top of each slice.
Bake: Toast in the oven for about 10–12 minutes, or until the cheese is melted and golden and the edges of the bread are crispy.
Assemble the crostini: Once out of the oven, let the crostini cool slightly. Tear the burrata and place a generous spoonful on each toast. Top with a slice of prosciutto and a few peach slices.
Finish with flair: Drizzle with hot honey and garnish with fresh basil leaves.
Serve immediately and enjoy the perfect balance of creamy, salty, sweet, and crispy!
