📝 Ingredients:
For the base:
- 20–25 cookies (such as digestive biscuits, graham crackers, or tea biscuits)
- 100g (about 7 tbsp) melted butter
For the cream filling:
- 500ml (2 1/4 cups) heavy cream (cold)
- 300g (10 oz) cream cheese (at room temperature)
- 1/2 cup sweetened condensed milk (adjust to taste)
- 1 tsp vanilla extract
- Juice of 1/2 lemon (optional – helps balance the sweetness)
For the topping (optional):
- Fruit jam, fresh berries, or chocolate ganache
- Crushed nuts or cookie crumbs for garnish

1. Prepare the crust:
- Crush the cookies in a food processor or by hand (using a rolling pin and a ziplock bag) until finely ground.
- Mix the crumbs with the melted butter until the texture resembles wet sand.
- Press the mixture into the bottom of a springform pan or cake mold to form an even base. Use the bottom of a glass to press it firmly.
- Place in the fridge for 15–20 minutes to set.
2. Make the cheesecake filling:
- In a large mixing bowl, beat the cold heavy cream until stiff peaks form. Set aside.
- In another bowl, mix the cream cheese, condensed milk, vanilla, and lemon juice. Beat until smooth and creamy.
- Gently fold the whipped cream into the cream cheese mixture using a spatula. Do this slowly to keep the mix light and fluffy.
3. Assemble the cheesecake:
- Pour the creamy mixture over the chilled crust.
- Smooth the top with a spatula.
- Cover with plastic wrap and refrigerate for at least 6 hours or overnight for best results.
4. Decorate (optional):
- Before serving, top with fruit jam, fresh fruits, melted chocolate, or anything you love.
- Add crushed nuts or extra cookie crumbs for texture.
