Cloud Cake (Diabetic-Friendly)
Ingredients:
3 large eggs, separated
1/4 cup cream cheese, softened
1/4 cup sour cream
1/4 cup erythritol (or other low-glycemic sweetener)
1 tsp vanilla extract
1/4 tsp cream of tartar
Pinch of salt
Instructions:
Preheat oven to 300°F (150°C). Line pan with parchment.
Mix yolks, cream cheese, sour cream, erythritol & vanilla until smooth.
Beat egg whites with cream of tartar + salt to stiff peaks.
Gently fold whites into yolk mix.
Pour into pan, smooth top, and bake 25–30 mins until golden.
Cool before slicing.
