Colcannon: A Hearty Taste of Irish Tradition 🇮🇪
Recipe & Instructions
🥔 2 pounds of potatoes, peeled and cut into chunks
🧈 6 tablespoons unsalted butter, or ghee
🥬 4 cups (lightly packed) chopped kale or cabbage
🧅 3 green onions, thinly sliced
🥛 ½ cup milk, any type works
🧂 Salt and pepper, to taste
🥔Boil the potatoes:
Place the peeled chunks of potato in a large pot, cover with cold water (about an inch above the potatoes), and add a pinch of salt. Bring to a boil, then simmer for 15–20 minutes, or until a fork slides in easily.
🥬Prepare the greens:
In another pot, melt the butter over medium heat. Add the chopped kale or cabbage and cook for 3–4 minutes, stirring, until just wilted and tender. Stir in the green onions, keeping a few aside for garnish, and cook for one more minute.
⚪Combine and mash:
Drain the potatoes well, then add them to the greens. Pour in the milk, season generously with salt and pepper, and mash everything together until creamy and flecked with green. Adjust butter or milk for your preferred texture.
🍽Finish and serve:
Spoon the colcannon into a warm serving bowl. Make a small well in the top, drop in a pat of butter, and scatter with the reserved green onions. Serve immediately while steaming hot.
