Ingredients:

  • 4 large potatoes, scrubbed and cut into wedges
  • 1/4 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika (optional, for color and flavor)
  • 1 teaspoon dried Italian herbs (optional — basil, oregano, thyme)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat oven:
    Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it with oil.
  2. Prepare the coating:
    In a large mixing bowl, combine the olive oil, Parmesan cheese, garlic powder, salt, pepper, paprika, and herbs. Stir until well mixed.
  3. Coat the potatoes:
    Add the potato wedges to the bowl and toss until each piece is evenly coated with the Parmesan mixture.
  4. Arrange on baking sheet:
    Lay the wedges in a single layer on the prepared baking sheet, skin side down if possible. Sprinkle any remaining Parmesan mixture over the top.
  5. Bake:
    Bake for 30–40 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the outside and tender inside.
  6. Serve:
    Remove from the oven, sprinkle with a bit more Parmesan and chopped parsley, and serve hot!
