🥔 Ingredients

  • 4 medium baking potatoes (Russet, Yukon Gold, or similar)
  • 3 tbsp olive oil (or melted butter, for richer flavor)
  • 3 garlic cloves, minced
  • 1 tsp dried rosemary (or 1 tbsp fresh, finely chopped)
  • 1 tsp dried thyme (or oregano / parsley — to taste)
  • 1 tsp salt
  • ½ tsp freshly ground black pepper
  • Optional: a pinch of chili flakes for a mild kick
  • Optional: grated Parmesan or fresh herbs to finish

🔪 Preparation

  1. Preheat oven to 200 °C / 400 °F.
    Line a baking tray with parchment paper or lightly oil it.
  2. Prepare the potatoes
    • Wash and scrub the potatoes well (keep the skin on).
    • Pat dry with a towel.
    • Cut each potato into thick wedges or cubes — or leave them whole and score the skin with a knife for even cooking.
  3. Make the garlic herb oil
    In a small bowl, combine:
    • Olive oil (or butter)
    • Minced garlic
    • Rosemary, thyme
    • Salt and pepper
      Mix well.
  4. Coat the potatoes
    • Place the potatoes in a large bowl, drizzle the garlic-herb oil over them, and toss until evenly coated.
    • If baking whole potatoes, rub the mixture all over each potato.
  5. Bake
    • Arrange potatoes in a single layer on the prepared tray.
    • Bake for 45–60 minutes, turning once halfway through, until golden and crisp outside and tender inside.
      (Whole potatoes may take up to 70 min depending on size.)
  6. Finish & serve
    • Sprinkle with fresh parsley or chives.
    • Optionally add a light dusting of Parmesan cheese or lemon zest for extra aroma.
    • Serve hot!
