🥔 Cheesy Potato Skillet

🌿 Ingredients
2 tbsp butter
1 tbsp olive oil
1 medium onion , finely chopped
2 cloves garlic , minced
2 lbs (900 g) potatoes , thinly sliced (Yukon Gold or Russet work best)
1 cup (240 ml) heavy cream (or half-and-half)
½ cup (120 ml) milk
1½ cups (150 g) shredded cheese (cheddar, mozzarella, Monterey Jack, or a mix)
½ tsp salt
¼ tsp black pepper
½ tsp paprika or smoked paprika (optional)
¼ cup fresh parsley or green onions , chopped (for garnish)
🔥 Instructions
1. Sauté aromatics
Heat butter and olive oil in a large oven-safe skillet (like cast iron) over medium heat .
Add the onion and cook for 3–4 minutes until soft and golden.
Add garlic and sauté 30 seconds until fragrant.
2. Layer the potatoes
Add the sliced potatoes to the skillet.
Season with salt , pepper , and paprika .
Pour in the cream and milk , stirring gently to coat the potatoes evenly.
3. Simmer until tender
Reduce heat to low , cover the skillet, and cook for 12–15 minutes , stirring occasionally, until potatoes are soft and the sauce starts to thicken.
4. Add the cheese
Sprinkle 1 cup of the cheese evenly over the potatoes and stir gently to melt into the sauce.
Top with the remaining ½ cup of cheese for that gooey, golden layer on top.
5. Bake or broil (optional for crispy top)
If your skillet is oven-safe, transfer it to a broiler or 425°F (220°C) oven for 5–7 minutes , until the top is bubbly and golden brown.
If not, cover for a few extra minutes on the stovetop until cheese melts completely.
6. Serve
Garnish with fresh parsley or green onions .
Serve hot and melty straight from the skillet!
