¼ cup (60 mL) cranberry sauce (whole berry preferred)
½ teaspoon fresh thyme leaves (or ¼ teaspoon dried thyme)
Salt and freshly ground black pepper, to taste
Optional garnish: a drizzle of honey or balsamic glaze, and extra thyme sprigs
Instructions
Preheat the oven: Set your oven to 400°F (200°C). If you have a pizza stone or baking sheet, place it in the oven while it preheats to make the flatbread crispier.
Prepare the flatbread base: Brush the flatbread lightly with olive oil on both sides. Place it on a parchment-lined baking sheet.
Assemble the toppings:
Spread the cranberry sauce evenly over the flatbread.
Arrange the pear slices evenly on top.
Layer the brie slices between and over the pear.
Sprinkle with thyme, and season lightly with salt and pepper.
Bake: Transfer to the oven and bake for 8–10 minutes, or until the cheese is melted and bubbling and the edges of the flatbread are golden and crisp.
Finish and serve:
Remove from the oven and let cool for 2–3 minutes.
Optionally drizzle with honey or balsamic glaze for extra sweetness and shine.
Slice into wedges or squares and serve warm.

Add caramelized onions or prosciutto for extra flavor.
Use fig jam instead of cranberry sauce for a seasonal twist.
A sprinkle of crushed walnuts or pecans adds crunch and richness.
