No-Flour, No-Sugar Oatmeal Breakfast Bake

🌱 No-Flour, No-Sugar Oatmeal Breakfast Bake

(Serves 1–2)

Ingredients

  • 1 cup oatmeal (rolled or quick oats)
  • 1 glass milk (about 200–250 ml; use dairy or plant milk)
  • 1 apple, chopped
  • 1 banana, sliced
  • 3 eggs
  • 60 g walnuts, chopped
  • Optional:
    • 1 tsp cinnamon
    • 1 tsp vanilla
    • A pinch of salt
    • A few berries or raisins

🥣 Instructions

1. Prepare the base

In a mixing bowl, combine:

  • oatmeal
  • milk

Let it sit for 5–10 minutes so the oats soften.

2. Add fruits & nuts

Stir in:

  • chopped apple
  • banana slices
  • chopped walnuts
  • cinnamon or vanilla if using

3. Add the eggs

Crack in the 3 eggs and mix well until everything is evenly combined.

4. Bake

  • Preheat oven to 180°C (350°F).
  • Pour the mixture into a small baking dish or oven-safe pan.
  • Bake for 25–35 minutes, until the top is golden and the center is set.

(If you’re in a hurry: you can also cook it on the stovetop like a thick omelette over low heat, about 10–15 minutes.)

5. Serve

Enjoy warm!
You can top it with:

  • fresh fruit
  • yogurt
  • a sprinkle of cinnamon
  • extra nuts

💡 Tips

  • For extra sweetness without sugar, add more banana or a handful of raisins.
  • For more protein, add a scoop of protein powder.
  • Stores well — make a bigger batch and meal-prep for 2–3 days.
