🥔 Delicious Cheesy Skillet Potatoes (Quick Dinner Recipe)

Ingredients

  • 500 g potatoes, peeled & cut into small cubes
  • 1 egg
  • ½ tsp black pepper
  • 1 tsp paprika
  • 2 tbsp flour
  • Vegetable oil (for frying)
  • 1 onion, chopped
  • ½ sweet red pepper, diced
  • 1 carrot, grated
  • 2 cloves garlic, minced
  • Salt, to taste
  • 100 g mozzarella, shredded
  • 100 g hard cheese (cheddar, gouda, etc.), shredded
  • 1 tbsp tomato paste
  • 2 tbsp soy sauce
  • 50 ml water
  • 200 ml cream (20–30%)

🔥 Instructions

1. Prepare the potatoes

  1. Place diced potatoes into a bowl.
  2. Add egg, flour, black pepper, paprika, and a pinch of salt.
  3. Mix well so the potatoes are coated in the seasoned mixture.

2. Pan-fry the potatoes

  1. Heat a generous amount of vegetable oil in a deep skillet.
  2. Add the coated potatoes.
  3. Fry on medium-high heat for 8–10 minutes, stirring occasionally, until lightly golden.
  4. Remove from pan and set aside.

3. Sauté the vegetables

  1. In the same pan (add a little more oil if needed), sauté:
    • Onion
    • Red bell pepper
    • Carrot
      for 4–5 minutes until softened.
  2. Add garlic and cook 30 seconds.

4. Add sauce ingredients

Stir in:

  • Tomato paste
  • Soy sauce
  • Water

Mix and cook 1–2 minutes to blend flavors.


5. Add cream & cheeses

  1. Reduce heat to medium-low.
  2. Pour in the cream and stir.
  3. Add half the mozzarella and half the hard cheese.
  4. Let the sauce gently simmer until cheese melts and thickens (2–3 minutes).

6. Bring it all together

  1. Add the fried potatoes back into the skillet.
  2. Stir so they’re fully coated in the creamy sauce.
  3. Sprinkle the remaining cheeses on top.
  4. Cover with a lid and cook on low for 5 minutes to melt the cheese.

7. Serve

Serve hot, straight from the skillet.
