  • 16 oz (450 g) Brussels sprouts, trimmed, rinsed, and halved
  • 3 tbsp olive oil (or melted butter)
  • ½ tsp kosher salt
  • ½ tsp cracked black pepper
  • 1 tsp Italian seasoning
  • 3–4 cloves garlic, minced
  • ¼ cup grated Parmesan cheese (plus extra for topping)

🔥 Instructions

1. Preheat oven

  • Set to 400°F (200°C).

2. Prepare Brussels sprouts

  • Pat dry after rinsing (this helps them crisp).
  • Place in a large mixing bowl.

3. Season

  • Add olive oil (or melted butter).
  • Add salt, pepper, Italian seasoning, and minced garlic.
  • Toss until everything is well coated.

4. Add Parmesan

  • Sprinkle ¼ cup grated Parmesan and toss again.

5. Arrange on baking sheet

  • Spread Brussels sprouts cut-side down on a parchment-lined or lightly greased tray.
  • This helps them get extra crispy.

6. Bake

  • Roast for 22–28 minutes, depending on size.
  • Stir halfway through or leave untouched if you want extra crisp on the cut side.
  • They’re done when golden brown and crispy on the edges.

7. Finish

  • Sprinkle with more Parmesan immediately after removing from the oven.
  • (Optional) Drizzle a little lemon juice for brightness.
