- In another bowl, combine flour, baking powder, and salt.
- Add dry ingredients to the cheese–butter mixture.
- Stir and knead lightly until it forms a soft dough.
- Wrap in plastic and chill for 30–60 minutes to firm up.
2. Prepare Filling
If using cinnamon sugar:
Mix sugar + cinnamon in a small bowl.
If using cheese filling:
Mash cottage cheese, sugar, and vanilla together until smooth.
If using jam:
Use a thick jam to prevent leaking.

- On a floured surface, roll the dough to about ⅛–¼ inch thickness.
- Cut into 3–4 inch squares or use a round cutter.

4. Bake
- Place pastries on a lined baking sheet.
- Brush tops with egg wash.

- For sweet pastries, dust with powdered sugar before serving.
🍽️ Serving Ideas
- Serve warm with tea or coffee.
- Drizzle with honey or chocolate for dessert.
- For savory pastries, serve with soup or salad.
⭐ Tips for Best Results
- The dough is naturally soft—chilling is important.
- Do not overfill, or the pastries may leak.
- Cottage cheese adds moisture; if dough feels too sticky, add 1–2 tbsp extra flour.
- You can freeze shaped pastries and bake directly from frozen (add 5 minutes to bake time).
