Ingredients (Makes 12–16 pastries)

  • 1 cup (225 g) cottage cheese
  • 1 cup (225 g) unsalted butter, softened
  • 2 cups (250 g) all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt

For Sweet Filling (choose one)

Option 1: Cinnamon Sugar

  • ½ cup sugar
  • 1–2 tsp cinnamon

Option 2: Jam

  • ½ cup of your favorite jam (apricot, strawberry, raspberry)

Option 3: Sweet Cheese

  • ½ cup cottage cheese
  • 2 tbsp sugar
  • ½ tsp vanilla

For Savory Filling (optional alternatives)

  • Spinach + feta
  • Mashed potato + herbs
  • Caramelized onion + cheese

Finish

  • 1 egg (for egg wash)
  • Powdered sugar for dusting (sweet pastries)

🥣 Instructions

1. Make the Dough

  1. In a bowl, combine cottage cheese and softened butter. Mix until mostly smooth (small curds are okay).
  2. In another bowl, combine flour, baking powder, and salt.
  3. Add dry ingredients to the cheese–butter mixture.
  4. Stir and knead lightly until it forms a soft dough.
  5. Wrap in plastic and chill for 30–60 minutes to firm up.

2. Prepare Filling

If using cinnamon sugar:

Mix sugar + cinnamon in a small bowl.

If using cheese filling:

Mash cottage cheese, sugar, and vanilla together until smooth.

If using jam:

Use a thick jam to prevent leaking.


3. Shape the Pastries

  1. Preheat oven to 375°F (190°C).
  2. On a floured surface, roll the dough to about ⅛–¼ inch thickness.
  3. Cut into 3–4 inch squares or use a round cutter.
  4. Add 1 teaspoon of filling to each piece.
  5. Fold dough over filling (like a triangle or roll-up) and pinch edges to seal.

4. Bake

  1. Place pastries on a lined baking sheet.
  2. Brush tops with egg wash.
  3. Bake 15–20 minutes, or until golden brown.
  4. Cool slightly.
  5. For sweet pastries, dust with powdered sugar before serving.
