  • 2 white fish fillets (cod, halibut, or sea bass)
  • 1 cup cherry tomatoes (red and yellow), halved

  • 3 cloves garlic, minced

Seasonings & Extras

  • 2–3 tbsp olive oil
  • Juice of Β½ lemon + extra slices
  • 1 tsp dried oregano (or Italian seasoning)
  • ΒΌ tsp paprika (optional)
  • Salt and black pepper to taste
  • Fresh parsley or basil, chopped (for serving)

1. Prep the Oven

  • Preheat oven to 400Β°F (200Β°C).

2. Prepare the Baking Dish

  1. Drizzle 1 tbsp olive oil in a small baking dish.
  2. Scatter in:
    • Cherry tomatoes
    • Black olives
    • Minced garlic
  3. Season with salt, pepper, and half the oregano.
  4. Toss to coat.

3. Add the Fish

  1. Place the fish fillets on top of the tomato mixture.
  2. Drizzle remaining olive oil over fish.
  3. Squeeze lemon juice over the fillets.
  4. Sprinkle with remaining oregano, paprika, salt, and pepper.
