π¬π·π Mediterranean Baked Fish
A vibrant, juicy baked fish dish layered with tomatoes, olives, garlic, olive oil, and fresh herbs. Works with cod, halibut, sea bass, or any mild white fish.
β Ingredients (Serves 2)
Fish & Vegetables
- 2 white fish fillets (cod, halibut, or sea bass)
- 1 cup cherry tomatoes (red and yellow), halved
- ΒΌ cup black olives (Kalamata or other), halved
- 3 cloves garlic, minced
Seasonings & Extras
- 2β3 tbsp olive oil
- Juice of Β½ lemon + extra slices
- 1 tsp dried oregano (or Italian seasoning)
- ΒΌ tsp paprika (optional)
- Salt and black pepper to taste
- Fresh parsley or basil, chopped (for serving)
π©βπ³ Instructions
1. Prep the Oven
- Preheat oven to 400Β°F (200Β°C).
2. Prepare the Baking Dish
- Drizzle 1 tbsp olive oil in a small baking dish.
- Scatter in:
- Cherry tomatoes
- Black olives
- Minced garlic
- Season with salt, pepper, and half the oregano.
- Toss to coat.
3. Add the Fish
- Place the fish fillets on top of the tomato mixture.
- Drizzle remaining olive oil over fish.
- Squeeze lemon juice over the fillets.
- Sprinkle with remaining oregano, paprika, salt, and pepper.
- Add a few lemon slices around the fish (optional).
4. Bake
- Bake 12β16 minutes, depending on thickness of fish:
- Thin fillets: ~12 minutes
- Thicker cod/halibut: ~15β16 minutes
- Fish is done when it flakes easily with a fork.
5. Finish
- Spoon the warm tomato-olive-garlic juices over the fish.
- Garnish with chopped fresh parsley or basil.

β Tips
- Add capers for extra briny flavor.
- Add artichoke hearts or thin-sliced red onion to the dish.
