🧾 Ingredients
Corn Base
- 2 cans (15.25 oz each) whole kernel corn, drained
- 1 can (14–15 oz) creamed corn
- 1 block (8 oz) cream cheese, softened or cut into cubes
- 4 tbsp butter
- ½ cup sour cream
- 1 cup shredded cheddar cheese
Seasonings
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
- Optional: ¼ tsp paprika, ⅛ tsp cayenne for a mild kick
Optional Add-ins
- ½ cup diced green chiles
- ½ cup crumbled bacon
- 1 cup French fried onions for topping
- 1 cup crushed Ritz crackers mixed with 2 tbsp melted butter for a crunchy top
🔥 Instructions
1. Preheat the oven
Set to 350°F (175°C).
2. Melt the cream mixture
In a large saucepan over medium heat, combine:
- Butter
- Cream cheese
Stir until melted and smooth.
3. Add sour cream and seasonings
Stir in:
- Sour cream
- Garlic powder
- Onion powder
- Salt
- Pepper
Mix until combined.
4. Add the corn
Stir in:
- Drained whole kernel corn
- Creamed corn
Mix until everything is fully coated.
5. Fold in the cheese
Add ¾ cup of the cheddar cheese, leaving ¼ cup for topping.
Stir gently to combine.
6. Transfer to baking dish
Pour mixture into a 9×13 baking dish or medium casserole dish.
Smooth the top.
7. Add topping
Sprinkle remaining ¼ cup cheddar over the top.
(Optional: add bacon, crackers, or fried onions now or during the last 10 minutes of baking.)
8. Bake
Bake 30–35 minutes, until:
- Hot and bubbly around the edges
- Cheese on top is melted
For a golden top: broil for 1–2 minutes at the end.
9. Serve
Let rest 5 minutes before serving.
