🧾 Ingredients

Corn Base

  • 2 cans (15.25 oz each) whole kernel corn, drained
  • 1 can (14–15 oz) creamed corn
  • 1 block (8 oz) cream cheese, softened or cut into cubes
  • 4 tbsp butter
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese

Seasonings

  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: ¼ tsp paprika, ⅛ tsp cayenne for a mild kick

Optional Add-ins

  • ½ cup diced green chiles
  • ½ cup crumbled bacon
  • 1 cup French fried onions for topping
  • 1 cup crushed Ritz crackers mixed with 2 tbsp melted butter for a crunchy top

🔥 Instructions

1. Preheat the oven

Set to 350°F (175°C).


2. Melt the cream mixture

In a large saucepan over medium heat, combine:

  • Butter
  • Cream cheese

Stir until melted and smooth.


3. Add sour cream and seasonings

Stir in:

  • Sour cream
  • Garlic powder
  • Onion powder
  • Salt
  • Pepper

Mix until combined.


4. Add the corn

Stir in:

  • Drained whole kernel corn
  • Creamed corn

Mix until everything is fully coated.


5. Fold in the cheese

Add ¾ cup of the cheddar cheese, leaving ¼ cup for topping.
Stir gently to combine.


6. Transfer to baking dish

Pour mixture into a 9×13 baking dish or medium casserole dish.
Smooth the top.


7. Add topping

Sprinkle remaining ¼ cup cheddar over the top.
(Optional: add bacon, crackers, or fried onions now or during the last 10 minutes of baking.)


8. Bake

Bake 30–35 minutes, until:

  • Hot and bubbly around the edges
  • Cheese on top is melted

For a golden top: broil for 1–2 minutes at the end.


9. Serve

Let rest 5 minutes before serving.
