Ingredients

  • 6 oz blue cheese wheel or wedge
  • 1 tablespoon olive oil
  • 1 tablespoon honey (optional, for drizzling)
  • Fresh thyme sprigs, for garnish
  • Fresh cracked black pepper (optional)
  • Crusty bread or crackers, for serving

Instructions

1. Prep the cheese

  • If using a wedge, keep the rind intact so it holds its shape while grilling.
  • Place the cheese on a small piece of foil or a grill-safe dish to prevent melting through the grates.

2. Oil and season

  • Drizzle the olive oil evenly over the top of the cheese.
  • Add a light sprinkle of fresh cracked black pepper, if desired.

3. Grill

  • Preheat your grill (gas or charcoal) to medium heat—about 350–375°F (175–190°C).
  • Place the cheese (on the foil/dish) onto the grill.
  • Close the lid and let it warm for 5–8 minutes, or until the cheese becomes soft and warm, with the edges slightly melty.
  • Avoid over-grilling, or it may fully liquefy.

4. Add honey and thyme

  • Remove from the grill carefully.
  • Drizzle with honey (if using).
  • Garnish generously with fresh thyme sprigs.

5. Serve

  • Serve immediately while warm with:
    • Crusty bread
    • Crostini
    • Crackers
    • Grilled fruit (like figs, peaches, or pears)

  • Add nuts: Sprinkle toasted walnuts or pecans on top for crunch.
