Total Time: 20–25 minutes

Ingredients

For the Sourdough Bloom

  • 1 large round sourdough loaf
  • 10 oz Brie cheese, sliced
  • 1 cup cranberry sauce (whole berry or homemade)
  • 1/2 cup pomegranate seeds
  • 1/4 cup roasted pistachios, chopped
  • 2 tablespoons hot honey
  • Zest of 1 orange
  • Fresh rosemary sprigs
  • Fresh thyme sprigs

For the Garlic Herb Butter

  • 4 tablespoons (1/2 stick) unsalted butter, melted
  • 2 garlic cloves, minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

⭐ FULL INSTRUCTIONS

1. Preheat

Preheat oven to 350Β°F (175Β°C).
Line a baking sheet with parchment.

2. Prepare the Sourdough Bloom

  1. Place the sourdough loaf on the baking sheet.
  2. Using a sharp bread knife, cut a crosshatch pattern (deep diamonds) into the loaf:
    • Cut almost to the bottom but not all the way through.
    • Each square should be about 1–1.5 inches wide.
  3. Gently pull apart the sections to create pockets for stuffing.

3. Make the Garlic Herb Butter

In a bowl, mix together:

  • melted butter
  • minced garlic
  • parsley
  • thyme
  • rosemary
  • salt & pepper

Stir until fully combined.

4. Brush the Loaf

  • Spoon or brush the garlic herb butter generously into all the cracks and crevices of the loaf.
  • Make sure to get the butter deep into the cuts β€” this creates incredible flavor.

5. Add the Brie

  • Slide slices of Brie into the cuts of the loaf.
  • Distribute evenly so every pull-apart section melts beautifully.

6. Add Cranberry Sauce

  • Spoon cranberry sauce into the gaps between the bread and brie.
  • Don’t worry if it’s messy β€” it melts into a gorgeous glaze.

7. Bake

Bake the loaf uncovered for 15–18 minutes, or until:

  • Brie is melted
  • Loaf is hot and pull-apart tender
  • Butter is bubbling and aromatic

Optional: Broil 1–2 minutes for golden edges (watch carefully).

8. Finish with Holiday Garnishes

Once out of the oven, top with:

  • Pomegranate seeds
  • Chopped pistachios
  • Orange zest
  • Fresh rosemary + thyme sprigs
  • A generous drizzle of hot honey

Serve Immediately

Place on a platter with:

  • Extra hot honey
  • Crackers
  • Apple slices
  • More cranberry sauce
  • Holiday greenery for decoration

Guests simply pull apart gooey pieces by hand!
